Spicy fish curry in creamy coconut sauce for a quick and delicious weeknight dinner.
Ingredients:
  • 20.00 ml ghee or olive oil
  • 1 brown onion, chopped
  • 1 tsp coriander
  • 1 tsp turmeric
  • 1 long green chilli, deseeded, finely chopped
  • 2 garlic cloves, crushed
  • 10 fresh curry leaves
  • 800g firm white fish fillets, cut into 2.5cm cubes
  • coriander leaves, to serve
  • Steamed Basmati rice, to serve
  • Pappadums, to serve
Instructions:
  • In a large frying pan over medium heat, sizzle ghee or oil. Sauté onion until tender, about 2 to 3 minutes. Introduce coriander, turmeric, chilli, garlic, and curry leaves, and stir until fragrant, approximately 1 minute.
  • Pour in the creamy coconut milk, then lower the heat to a gentle simmer for 10 minutes, allowing it to reduce slightly. Gently place the fish into the simmering liquid and cook for 4 to 5 minutes until it is perfectly cooked through.
  • Enhance the flavors with a sprinkle of salt and pepper. Finish with freshly chopped coriander leaves and enjoy alongside fluffy basmati rice and crispy pappadums.
