Fish with cucumber salsa

Transform your fish dinner with this zesty salsa!
Ingredients:
  • 125.00 ml plain flour
  • 4 (800g total) white fish fillets
  • Steamed baby potatoes, to serve
  • Steamed green beans, to serve
  • 1/2 small telegraph cucumber, deseeded, finely chopped
  • 2 tomatoes, finely chopped
  • 40.00 ml finely chopped red onion
  • 40.00 ml coriander leaves, chopped
  • 1 tsp balsamic vinegar
Instructions:
  • Prepare the salsa by combining all ingredients in a bowl, seasoning with salt and pepper. Gently stir to mix everything together. Cover and let it sit for 10 minutes.
  • Spread a mixture of flour, salt, and pepper on a plate. Gently coat both sides of the fish with the seasoned flour.
  • In a large non-stick frying pan over medium-high heat, heat oil. Cook fish in batches of 2 pieces for 2 to 3 minutes each side until golden and cooked through.
  • Divide the fish among 4 serving plates. Spoon salsa over the fish. Serve with potatoes and beans on the side.
