Ingredients:
  • 200g jasmine rice
  • 18.20 gm peanut oil
  • 600g beef fillet, thinly sliced
  • 1 red onion, cut into wedges
  • 5cm ginger, cut into matchsticks
  • 2 garlic cloves, thinly sliced
  • 1/2 tsp Chinese five spice
  • 1 bunch broccolini, cut into 5cm pieces
  • 1 bunch asparagus, cut into 5cm pieces
  • 60ml oyster sauce
  • 20.00 ml Chinese rice wine
  • 250.00 ml coriander leaves
  • 2 green onions, thinly sliced diagonally
Instructions:
  • Spread Sunrice Jasmine rice evenly on a large tray and chill in the freezer for 25 minutes until cool and slightly dried.
  • In a large bowl, mix together the beef, onion, ginger, garlic, and five spice. Heat half of the oil in a wok over high heat until it just starts to smoke. Add one-quarter of the beef mixture and stir-fry for 2 minutes until browned. Transfer to a bowl. Repeat this process in 3 more batches with the remaining beef, making sure to reheat the wok between each batch.
  • Heat the remaining oil in a wok over high heat. Stir-fry broccolini and asparagus for 2 minutes until just tender. Add rice and beef mixture, stir-fry for 2 minutes until heated through. Stir in oyster sauce and wine, cook for 2 minutes. Remove from heat, add half the coriander, and toss to combine.
  • Serve the stir-fry in individual bowls, then garnish with the remaining coriander and green onion.
