Unforgettable ginger cake infused with five-spice, orange zest, and black tea.
Ingredients:
  • 0.25 cup chopped crystallized ginger
  • 1.5 tablespoons grated orange zest
  • 4 teaspoons baking powder
  • 1.5 teaspoons five-spice powder
  • 1 cup unsweetened applesauce
  • 0.5 cup brewed black tea
  • 0.5 cup white sugar
  • 2 tablespoons white sugar
  • 0.25 cup sunflower seed oil
  • 0.5 tablespoon ground turmeric, or to taste
Instructions:
  • Preheat the oven to 325°F (165°C) and prepare a 9x13-inch baking pan by greasing it and lining it with parchment paper.
  • Combine the flour, ginger, baking powder, orange zest, five-spice, and salt in a bowl and mix well.
  • Combine applesauce and tea in a separate bowl.
  • In a large bowl, whip eggs with 1/2 cup plus 2 tablespoons sugar using an electric mixer until fluffy. Gradually add oil while beating on medium speed until well blended. Alternately mix in flour and applesauce until just combined. Transfer batter into the pan.
  • Bake in the hot oven until a toothpick inserted in the center comes out clean, for around 60 minutes.
  • Allow the cake to cool in the pan for 30 minutes before gently flipping it onto a wire rack to finish cooling for at least 45 minutes.
  • Cut parchment paper into desired shapes for stencils, lightly brush with water, and adhere to the cake surface. Sprinkle turmeric around the shapes and carefully remove the stencils.
