Classic Canadian Flapper Pie with a graham cracker crust, a creamy filling, and a rich history from World War I.
Ingredients:
  • 1.5 cups graham cracker crumbs
  • 0.5 cup white sugar
  • 0.5 cup butter, melted
  • 1 tablespoon ground cinnamon
  • 3 cups milk
  • 0.25 cup cornstarch
  • 3 egg yolks
  • 1 teaspoon vanilla extract
  • 3 egg whites
  • 2 tablespoons white sugar
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) for the perfect cooking temperature.
  • Combine graham cracker crumbs, 1/2 cup sugar, melted butter, and cinnamon in a bowl, setting aside 1/4 cup for topping later. Press the rest of the mixture into a 9-inch deep-dish pie plate for the crust. Bake in a preheated oven for 8 minutes.
  • 1. Heat milk in a saucepan until hot but not boiling. In a non-plastic bowl, whisk together sugar, cornstarch, egg yolks, and vanilla. Slowly pour hot milk into the yolk mixture while whisking. Return mixture to saucepan and bring to a boil, stirring constantly. Cook for 2 to 3 minutes until thickened. Pour custard into graham cracker crust.
  • Preheat the broiler in the oven and position the rack 6 inches below the heat source.
  • Whisk the egg whites until glossy peaks form, then gradually add 2 tablespoons of sugar and continue whisking until the meringue is stiff. Spread the meringue over the custard filling and sprinkle with the remaining graham cracker crumbs.
  • Broil the pie until the meringue turns golden brown, for about 3 to 5 minutes.
