Indulge in Chef John's tangy, crispy, and chewy no-yeast pepperoni pizza with gooey cheese topping.
Ingredients:
  • 2 cups self-rising flour, or more as needed
  • 1.5 teaspoons white sugar
  • 2 tablespoons finely grated Parmigiano-Reggiano cheese
  • 1 cup plain Greek yogurt
  • 1 teaspoon water, or as needed
  • 2 tablespoons cornmeal, divided
  • 0.667 cup pizza sauce, divided
  • 8 ounces low-moisture mozzarella cheese, shredded
  • 0.25 cup finely grated Parmigiano-Reggiano cheese, divided
  • 26 slices pepperoni, divided
  • 2 teaspoons olive oil, divided
Instructions:
  • 1. Prep all ingredients. Preheat the oven to a high heat of 500 degrees F (260 degrees C). Combine 2 cups of self-rising flour, sugar, and Parmigiano-Reggiano cheese in a bowl until fully mixed. Stir in olive oil and Greek yogurt until a shaggy dough comes together.
  • Use your hands to combine the dough until it forms a cohesive mixture, ensuring the spoon is clean.
  • Place dough onto a work surface and knead until smooth. The dough may seem dry, but resist adding more liquid at this time.
  • Work the dough until it becomes smooth and stretchy, which should take around 3 to 4 minutes. Only add a teaspoon or two of water or flour if really needed.
  • Divide the dough into two equal portions. Prepare a baking sheet by lining it with parchment paper and sprinkling 1 tablespoon of cornmeal evenly over it.
  • Roll out the dough on a lightly floured surface into a thin 1/8-inch-thick rectangle, then place it on the prepared baking sheet.
  • Spread half of the pizza sauce on the dough, leaving a small border. Sprinkle half of the mozzarella and Parmigiano-Reggiano on top. Arrange half of the pepperoni slices over the cheese and drizzle 1 teaspoon of oil over everything.
  • Bake in the center of the preheated oven for about 15 minutes until the crust is beautifully browned and the toppings are bubbly. Allow to sit on a wire rack for 5 minutes before slicing and serving.
  • After taking the first pizza out of the oven, follow the same process (Steps 7 to 9) to top and bake the second pizza.
