Easy vegetarian pizzas recipe

Make quick and healthy Mediterranean pizzas in a flash.
Ingredients:
  • 4 x 40g wholegrain wraps
  • 90g (1/3 cup) no-added-salt tomato paste
  • 2 zucchini, thinly sliced
  • 1 yellow capsicum, deseeded, thinly sliced
  • 250g cherry tomatoes, halved
  • 125g can black beans, rinsed, drained
  • 100g Greek feta, crumbled
  • 60g baby rocket
  • 2 tsp balsamic vinegar
Instructions:
  • Preheat your oven to a toasty 210C (190C fan forced) and get your 2 large baking trays ready with a trusty layer of baking paper.
  • Arrange wraps on baking trays. Spread each wrap evenly with tomato paste. Top each wrap with zucchini, capsicum, tomato, beans, and feta. Bake for 10-12 minutes until golden and crisp. Serve sprinkled with rocket and drizzled with balsamic.
