Quick stovetop pizzas with tortillas, melty mozzarella, tomato sauce, and fresh basil in a cast iron skillet.
Ingredients:
  • Flour tortillas (about 8-inches diameter)
  • Grated mozzarella cheese
  • Tomato sauce
  • Fresh basil leaves, thinly sliced
Instructions:
  • Cook flour tortilla on a hot skillet until it puffs up: Heat a large cast iron skillet or griddle over medium high to high heat. Place a flour tortilla in the center and cook until it puffs up. Flip it over, reduce heat to medium low, and gently press down any air bubbles with a knife or fork.
  • Top the tortilla with a delicate layer of grated mozzarella cheese. Once the cheese starts to melt, spread a thin layer of tomato sauce using the back of a spoon. Finish off with a light sprinkle of more cheese on top of the sauce.
  • Remove the pan from heat and cover to melt the cheese: Once the tortilla edges start to brown, indicating the bottom is nice and brown, remove the pan from heat. Cover for about a minute to melt the cheese with the residual heat.
  • Garnish with fragrant fresh basil slices, then transfer to a plate and slice using a pizza cutter or sharp knife. Enjoy right away.
