Potato and Beef-Tortilla Skillet

Elevate your meal with a zesty Southwestern casserole.
Ingredients:
  • 1 pound lean ground beef
  • 1 box (4.7 oz) Betty Crocker™ au gratin potatoes
  • 3 cups hot water
  • 1 can (11 ounces) whole kernel corn with red and green peppers, drained
  • 1 cup shredded taco-seasoned, Cheddar or Monterey Jack cheese (4 ounces)
  • 1 cup coarsely crushed tortilla chips
Instructions:
  • In a 10-inch skillet, sauté the beef over medium heat, stirring occasionally, until browned. Drain any excess fat.
  • Combine Potatoes, Sauce Mix, and hot water in a pot. Bring to a boil, then lower the heat and simmer uncovered for 22 minutes. Stir occasionally until the potatoes are tender.
  • Fold in sweet corn then generously sprinkle with your favorite cheese. Cover and gently simmer for 2 to 3 minutes, allowing the corn to heat through and the cheese to melt irresistibly. Just before serving, top it off with a satisfying crunch of crushed tortilla chips.
