Potato and beef croquettes

Delicious croquettes can be enjoyed as a snack or paired with veggies for a satisfying meal.
Ingredients:
  • 1kg sebago potatoes, peeled, chopped
  • 125.00 ml plain flour, plus extra for dusting
  • 18.20 gm olive oil
  • 1 large brown onion, finely chopped
  • 250g beef mince
  • 69.38 gm tomato paste
  • 40.00 ml finely chopped fresh coriander leaves
  • 40.00 ml currants
  • 500.00 ml dried panko breadcrumbs
  • Vegetable oil, for shallow frying
Instructions:
  • In a large saucepan, simmer potatoes in cold water until tender. Drain and mash. Mix in flour and 1 egg until fully combined. Transfer to a bowl and let cool.
  • 1. Heat oil in a frying pan over medium-high heat and add onion. Sauté for 3 minutes until softened. 2. Add the mince and cook for 5 minutes, breaking it up with a wooden spoon until browned. 3. Stir in the tomato paste, coriander, and currants for 30 seconds. 4. Remove the pan from heat and allow it to cool for 10 minutes before serving.
  • Coat hands thoroughly with flour. Take 1/4 cup of potato mixture and shape it into a disc in your palm. Place 1 tablespoon of mince mixture in the center of the potato round. Fold the edges around the mince mixture and roll to seal, forming a sausage shape. Repeat with the rest of the potato and meat mixtures to create 12 croquettes.
  • First, put breadcrumbs in a shallow dish. Then, lightly beat the remaining egg in a bowl. Next, dip each croquette in the egg, followed by rolling it in the breadcrumb mixture while pressing firmly to coat. Place the coated croquettes on a large baking tray and cover them. Refrigerate for 1 hour until they are firm.
  • Heat oil in a large, deep heavy-based frying pan until hot. Cook croquettes in batches for 3 to 5 minutes until golden. Drain on paper towel-lined baking tray and serve.
