Indulge in a robust sweet potato and beef curry bursting with seasonal veggies.
Ingredients:
  • 18.20 gm peanut oil
  • 700g Gravy Beef, cut into 3cm pieces
  • 100g curry paste
  • 1 brown onion, chopped
  • 250ml beef stock
  • 1 large sweet potato, peeled, chopped
  • 300g cauliflower, cut into florets
  • 100g green beans, trimmed, cut into 3cm lengths
  • 48.80 gm fish sauce
  • 32.00 gm brown sugar
  • Steamed jasmine rice, to serve
  • 62.50 ml coriander leaves, to serve
  • Lime halves, to serve
Instructions:
  • In a large saucepan, heat oil over medium-high heat. Brown the beef for 5 minutes. Add curry paste and onion, cook for 2 minutes until fragrant. Pour in coconut milk and stock, bring to a boil, then reduce heat, cover, and simmer for 1 1/2 hours until beef is tender.
  • Cook sweet potato for 20 minutes or until almost tender. Then add cauliflower, beans, fish sauce, sugar, and lime juice and cook for 7 more minutes until heated through and vegetables are tender.
  • Garnish the curry with a sprinkle of fresh coriander and serve with a side of rice and lime halves.
