Engage kids with these playful lolly-filled biscuits.
Ingredients:
  • 175g butter, chilled, chopped
  • 500.00 ml plain flour
  • 65.00 gm rice flour
  • 141.90 gm caster sugar
  • 8.80 gm vanilla extract
  • 1 egg
  • 4 x 200g packets fruit drop boiled lollies
  • Smarties, to decorate
Instructions:
  • In a food processor, blend butter, flours, and sugar until a breadcrumb-like mixture forms. Mix in vanilla and egg until a soft dough forms, adding 1 tablespoon of cold water if needed.
  • Form the dough into 2 discs, wrap them in plastic wrap, and refrigerate for 1 hour or until they are firm.
  • 1. Preheat your oven to 170C/150C fan-forced and prepare 3 large baking trays by greasing and lining them with baking paper. 2. Roll out one dough disc until it's 3mm thick between two sheets of baking paper. 3. Use a 5cm fluted flower-shaped cutter to cut shapes from the dough and place them on the prepared trays, spacing them 3cm apart. 4. Re-roll any dough scraps and use a 3.5cm flower-shaped cutter to cut shapes from the center of each biscuit.
  • Unwrap the fruit drops and place 1 in the center of each flower. Insert a skewer or dowel stick into the base of each flower. Bake one tray at a time for 8 to 10 minutes until the fruit drops melt, the biscuits are firm, and turning golden. Let the biscuits cool on the trays and then serve in a vase filled with Smarties.
