Grilled garlic infused with herbs and olive oil, served over warm focaccia. Delicious!
Ingredients:
  • 2 large bulbs garlic
  • 1 tablespoon olive or vegetable oil
  • 1 teaspoon chopped fresh or 1/4 teaspoon dried thyme leaves
  • 1 round focaccia bread, 12 inches in diameter (16 ounces)
Instructions:
  • Prepare the grill for direct heat by heating the coals or gas grill. Peel off the loose paperlike layers from the garlic bulbs without separating the cloves. Put each garlic bulb on an 18-inch square of heavy-duty foil. Brush the bulbs with oil and sprinkle thyme over them. Wrap the bulbs securely in the foil.
  • Grill garlic cloves until very soft, about 25-35 minutes over medium heat, positioned 4 to 6 inches away from heat source. During the last 8-10 minutes, grill focaccia on the side until golden brown, flipping once. Serve by squeezing garlic out of cloves onto focaccia slices.
