Fonio porridge with dried fruits, coconut, cinnamon, and nuts for a nutritious breakfast.
Ingredients:
  • 0.25 cup walnuts
  • 0.25 cup almonds
  • 2 cups water
  • 1 cup fonio grains
  • 4 dates, pitted and chopped
  • 1 cup milk
  • 0.5 cup raisins
  • 0.5 cup dried cranberries
  • 0.5 cup fresh blueberries
  • 6 tablespoons milk
  • 6 tablespoons shredded coconut
  • 6 teaspoons ground cinnamon
Instructions:
  • Toast a medley of walnuts and almonds in a skillet over gentle heat for 4 to 5 minutes. Coarsely chop into sizable pieces and set aside.
  • In a medium saucepan, combine water and fonio, stirring until smooth. Mix in dates and bring to a gentle boil, crushing the dates as you stir. Lower the heat once dates start to dissolve. Stir in 1 cup milk, raisins, and cranberries. Simmer and stir frequently until fonio absorbs all the liquid, approximately 8 minutes.
  • Portion the porridge into 6 bowls and garnish each with a generous sprinkle of toasted nuts, blueberries, 1 tablespoon of milk, coconut, and a dash of cinnamon on top before serving.
