Nutritious blend of fonio grains, aromatic veggies, sesame seeds, nuts, and raisins. Perfect as a tasty alternative to rice pilaf, ideal with any meat or fish dish.
Ingredients:
0.75 cupwarm vegetable stock, divided
0.25 cupgolden raisins
2tablespoons vegetable oil
1shallot, minced
2tablespoons black sesame seeds
0.25 cupshreddedcarrots
0.33333334326744 cupchoppedalmonds
1cupfonio grains
1pinch salt and freshly ground black pepper to taste
0.125 cuppomegranate seeds
Instructions:
Mix together the plump raisins with half a cup of flavorful vegetable stock in a bowl, then set aside.
In a deep skillet over medium heat, heat oil. Cook shallot, garlic, black sesame seeds, carrots, and almonds until fragrant and softened for about 4 minutes. Stir in fonio to absorb flavors for about 2 minutes. Add raisins and stock, stirring until fonio absorbs the liquid, about 5 minutes. Add more stock as needed until fonio is soft. Season with salt and pepper to taste depending on brand and quality of fonio.
Once the liquid is fully absorbed, take it off the heat. Fluff the dish with a fork and garnish with fresh pomegranate seeds before serving.
