Fontina Macaroni and Cheese

Elevate comfort food with creamy fontina cheese.
Ingredients:
  • 2 cups uncooked elbow macaroni
  • 2 tablespoons butter
  • 2 tablespoons Gold Medal™ all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon grated or very finely chopped onion
  • 2 cups milk
  • 2 cups shredded fontina cheese (8 oz)
  • 1 tablespoon chopped fresh thyme leaves
Instructions:
  • Prepare and cook the macaroni according to the package instructions, then drain.
  • In a 10-inch skillet, melt butter over medium heat. Whisk in flour, salt, and onion, cooking for 2 to 3 minutes until mixture is lightly golden and has a nutty aroma, while stirring constantly.
  • Pour in the milk and keep whisking while scraping the bottom of the skillet until the mixture comes to a boil and thickens. Take it off the heat, then add the cheese and thyme, stirring with the whisk until smooth. Finally, mix in the drained macaroni.
  • Garnish with extra thyme, if preferred.
