Ingredients:
  • 0.33333334326744 cup dry white wine
  • 0.5 teaspoon dry mustard
  • 0.25 teaspoon cayenne pepper
  • 2 cups heavy whipping cream
  • 0.5 cup chicken stock
  • 2 cups shredded fontina cheese
Instructions:
  • In a saucepan over medium heat, melt butter until a pinch of flour sprinkled in bubbles. Whisk in flour to create a thick paste like cake frosting. Cook and whisk until golden and aromatic, about 20 minutes. Stir in wine, mustard, and cayenne.
  • Whisk heavy whipping cream into the flour-butter mixture, cooking and stirring until thickened, approximately 5 minutes. Fold in fontina cheese and stir until melted, around 1 minute. Transfer the mixture to a fondue pot.
