Delightful gluten-free Italian desserts for all occasions.
Ingredients:
  • unsalted butter for greasing
  • 4 large free-range egg whites
  • 350 g caster sugar
  • 350 g ground almonds
  • 30 ml amaretto liqueur
  • icing sugar
Instructions:
  • Preheat the oven to 170ºC/gas 3 and prepare two baking sheets by greasing and lining them. In a bowl, whip the egg whites until stiff. Carefully mix in the sugar, almonds, and amaretto until smooth. Use a teaspoon or piping bag to place small portions of the mixture on the baking trays, spacing them 2cm apart. Bake for 10 to 15 minutes until lightly golden. Allow to cool on a wire rack and finish by dusting with icing sugar.
