Amaretti (Italian macaroons)

Indulge in decadent Italian-style macaroons for a taste of 'la dolce vita'.
Ingredients:
  • 500g almond meal
  • 400g caster sugar
  • 4 egg whites
  • 17.40 gm vanilla essence
  • 30 whole blanched almonds
  • 30 glace cherries, halved
Instructions:
  • 1. Preheat the oven to 160°C. 2. Line two baking trays with non-stick baking paper. 3. In a large bowl, combine almond meal, sugar, egg whites, and vanilla essence. Mix together until well combined using a wooden spoon.
  • Roll 2 teaspoonfuls of the mixture into balls, placing them on trays. Press a blanched almond into half of the biscuits and a glace cherry into the remaining balls.
  • Bake for 15-18 minutes, or until a light golden color is achieved. Allow the cookies to cool slightly on the trays before transferring them to a wire rack to cool completely.
