Delicious homemade Italian amaretti cookies: crunchy outside, chewy inside, with almond flour, egg whites, and sugar. Superior to store-bought options.
Ingredients:
  • 2 1/2 cups of almond flour -or- 3 cups of blanched slivered almonds, finely ground up
  • 1 1/4 cup of baker's sugar (superfine sugar)
  • 3 egg whites
  • 1/2 teaspoon of vanilla extract
  • 1 teaspoon of almond extract
  • Extra sugar for dusting
Instructions:
  • Preheat the oven by setting it to 300°F and prepare baking sheets with parchment paper.
  • Prepare the dough: Combine almond flour and sugar in a food processor and pulse. Pour in vanilla and almond extracts, pulse briefly. Add eggs one by one, pulsing until a smooth dough forms.
  • Place teaspoons of the dough on the parchment paper-lined baking sheet, then sprinkle with sugar.
  • Bake at 300°F for 24-30 minutes until golden brown. Allow to cool completely before serving. They will initially be slightly chewy, but will become nicely crispy over the next couple of days. Store in a cool, dry place.
