Delicate Italian macaroons perfect for tea time.
Ingredients:
  • 250.00 ml blanched whole almonds
  • 2 eggwhites
  • Pinch of cream of tartar
  • 24.00 gm pure icing sugar
  • 5ml (1 tsp) almond essence
  • 62.50 ml flaked almonds
  • Espresso, to serve
Instructions:
  • Preheat the oven to 180°C. Spread almonds on a baking tray and bake for 10 minutes until golden brown, flipping halfway through. Let cool, then lower the oven temperature to 160°C.
  • In a food processor, pulse almonds and half of the caster sugar until they form fine crumbs. In a separate bowl, beat egg whites and cream of tartar until stiff peaks form. Gradually mix in the remaining caster sugar until glossy, then stir in the almond essence. Combine the almond mixture with icing sugar in a separate bowl, then gently fold into the egg whites until just combined.
  • Prepare the baking tray by greasing and lining it with non-stick baking paper. Transfer the mixture into a piping bag fitted with a 1cm nozzle and pipe rounds, approximately 3cm in diameter, onto the tray. Alternatively, you can simply place spoonfuls of the mixture directly onto the tray.
  • Place a flaked almond on top of each biscuit and bake for 15 minutes until crispy. Allow them to cool fully before serving with a side of espresso.
