Indulgent amaretti crunch dessert with raspberry sauce, mascarpone cream, and amaretti cookies in elegant shooter glasses for a restaurant-worthy presentation.
Ingredients:
  • 1 cup heavy whipping cream
  • 0.5 pound raspberries
  • 3 tablespoons white sugar, divided
  • 1 tablespoon water
  • 1 teaspoon lemon juice
  • 0.25 cup amaretto liqueur
  • 1 (8 ounce) container mascarpone cheese
  • 1 cup crushed amaretti
  • 4 whole amaretti cookies
Instructions:
  • Set aside 6 raspberries for decoration. Combine the rest of the raspberries with 2 tablespoons of sugar, water, and lemon juice in a saucepan. Simmer over low heat until the raspberries break down, stirring occasionally, for 5 to 7 minutes. Strain the mixture through a fine mesh sieve into a bowl to reserve the raspberry sauce, discarding the seeds.
  • In a mixing bowl, combine amaretto liqueur, heavy cream, and the remaining sugar. Whip until soft peaks form, then add the mascarpone cheese and blend well.
  • Add a generous sprinkle of crushed amaretti to the bottom of a serving glass, followed by a dollop of whipped mascarpone mixture and a drizzle of raspberry sauce. Layer these ingredients until you reach the top, then garnish with a raspberry and a whole amaretti cookie. Repeat with the rest of the ingredients.
