Four-bean, rocket and chorizo salad

Ingredients:
  • 3 chorizo sausages, sliced
  • 80g baby rocket leaves
  • 1 red capsicum, seeded and chopped
  • 400g can four bean mix, rinsed and drained
  • 20.00 ml red wine vinegar
Instructions:
  • Preheat a large non-stick frying pan over medium-high heat. Sear chorizo for 3 minutes, turning occasionally, until rich golden and slightly crispy. Transfer to a paper towel to drain and keep warm.
  • Combine olive oil, vinegar, salt, and pepper in a non-metallic bowl, whisk together.
  • Prepare a vibrant dish by combining chorizo, four-bean mix, capsicum, and rocket in a serving dish. Finish with a generous drizzle of dressing and enjoy with crusty bread.
