Tasty four-bean chicken dish with balsamic vinegar and spinach.
Ingredients:
  • 750g chicken tenderloins
  • 420g can 4 bean mix, drained, rinsed
  • 250g tuscan mix
  • 100g baby spinach
Instructions:
  • In a shallow dish, coat the chicken with balsamic vinegar and olive oil. Cover and refrigerate to marinate for 15 minutes.
  • Preheat a frying pan over medium heat. Cook chicken for 5 minutes on each side until fully cooked. Then, remove from the pan and roughly chop.
  • Combine 4 bean mix, Tuscan mix with its oil, and baby spinach in a large bowl. Mix in the chicken until well combined.
