Kid-friendly caramelized chicken with irresistible flavors.
Ingredients:
  • 12 sprigs rosemary
  • 900g chicken thigh fillets (about 7), trimmed, cut into 2cm cubes
  • 40.00 ml balsamic vinegar
  • 32.00 gm brown sugar
  • 200g tub hummus
  • 4 small wholemeal pita breads, halved, toasted
  • 2 vine-ripened tomatoes, sliced
  • 80g baby rocket
  • Olive oil, to serve
  • Lemon juice, to serve
Instructions:
  • Prepare rosemary sprigs by removing lower leaves for another recipe and trimming ends on an angle. Thread chicken onto rosemary skewers.
  • In a large, shallow dish, mix together vinegar, sugar, salt, and pepper to taste. Add kebabs to the marinade and ensure they are evenly coated. Cover and chill in the refrigerator for 1 hour or until you're ready to cook.
  • In a large non-stick frying pan over medium-high heat, heat oil. Cook kebabs in batches for 8-10 minutes, turning occasionally until fully cooked. Serve promptly with hummus, pita bread, tomato, rocket, and a drizzle of oil and lemon juice.
