Balsamic Chicken

Shiny, golden-brown BBQ chicken with a tangy balsamic glaze.
Ingredients:
  • 12 boneless skinless chicken thighs (about 1 1/2 lb)
  • 1/2 cup white wine or apple juice
  • 1/2 cup chicken broth
  • 2 tablespoons lemon juice
  • 2 tablespoons balsamic or red wine vinegar
  • 1 tablespoon chopped fresh or 1/2 teaspoon dried thyme leaves
  • 2 teaspoons grated lemon peel
  • 1 teaspoon paprika
Instructions:
  • Prepare the chicken by trimming off excess fat. Combine all the remaining ingredients in a shallow glass or plastic dish. Place the chicken in the dish and ensure it is coated with the mixture. Cover the dish and let it marinate in the refrigerator for at least 2 hours, but not more than 24 hours.
  • Place chicken and marinade in a 12-inch nonstick skillet. Bring to a boil, then cover and simmer for 15 to 20 minutes until the chicken is cooked through. Remove chicken and keep warm.
  • Bring the marinade to a boil and simmer for about 6 minutes until it reduces by half. Drizzle the reduced marinade over the chicken.
