Mediterranean freekeh salad with tahini dressing - a versatile lunch option or delicious side for grilled meats.
Ingredients:
  • 1 cup freekeh
  • 2 cups chicken broth
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon tahini
  • 1 teaspoon honey
  • salt and ground black pepper to taste
  • 0.5 cup pomegranate seeds
  • 0.25 cup red onion, minced
  • 2 tablespoons minced fresh mint
  • 2 tablespoons minced fresh parsley
  • 0.5 cup crushed pistachios
Instructions:
  • Toast freekeh in a saucepan over medium-high heat until fragrant for about 3 minutes. Pour in broth and simmer covered until liquid is absorbed, around 20 minutes. Remove from heat, rest for 5 minutes, then transfer to a bowl to cool.
  • In a small bowl, blend vinegar, tahini, and honey together. Gradually add olive oil while whisking until smooth. Season with salt and pepper to taste.
  • Combine pomegranate seeds, onion, mint, and parsley with the cooked freekeh in a bowl. Drizzle in the dressing, toss gently to coat, and season with salt and pepper to taste. Chill in the refrigerator for 30 minutes. Sprinkle with pistachios just before serving to keep them crispy.
