Delicious roast lamb salad with orange and cauliflower, a perfect twist for a cozy family meal.
Ingredients:
  • 3 oranges
  • 2.50 gm ground cumin
  • 800g cauliflower, cut into florets
  • 1 red onion, cut into thin wedges
  • Olive oil cooking spray
  • 20.00 ml sunflower seeds
  • 20.00 ml pepitas
  • 62.50 ml pecan pieces
  • 89.38 gm honey
  • 250.00 ml freekeh, rinsed
  • 400g lean lamb leg steaks
  • 20.00 ml cider vinegar
  • 125.00 ml fresh flat-leaf parsley leaves
Instructions:
  • Preheat your oven to 200C/180C fan-forced and line a large baking tray with baking paper.
  • Grate the rind of 2 oranges to get 1 tablespoon. Combine 2 teaspoons of orange rind and cumin in a large bowl. Add cauliflower and onion, toss to coat, then place on a prepared tray and spray with oil. Roast for 15 minutes. In another bowl, mix sunflower seeds, pepitas, pecans, and 1 tablespoon honey. Season with salt and pepper. Remove the cauliflower from the oven and spoon level teaspoons of seed mixture onto the tray. Roast for an additional 5 to 8 minutes until the cauliflower is tender and the seed mixture is golden and crispy.
  • Cook the freekeh according to the package instructions, then make sure to drain it well.
  • Mix the leftover orange zest with 1 tablespoon of the remaining honey. Heat half of the oil in a large non-stick frying pan over medium-high heat. Cook the lamb, brushing it with the honey mixture, for 2 to 3 minutes on each side for medium doneness or until it reaches your desired level of doneness. Place the lamb on a plate, loosely cover with foil, let it rest for 10 minutes, and then slice.
  • Juice the last orange to get 2 tablespoons of juice. Combine the orange juice with vinegar, remaining honey, and remaining oil in a small bowl. Stir until honey is dissolved. Season with salt and pepper. Peel and slice the remaining oranges into rounds. In a bowl, mix freekeh, cauliflower mixture, orange slices, mint, parsley, honey mixture, and lamb. Toss well to combine all ingredients. Serve and enjoy.
