Whip up a quick soy and ginger marinade, coat chicken breasts, and freeze for a flavorful homemade meal in no time.
Ingredients:
  • 12 boneless skinless chicken breasts (about 4 1/2 lb)
  • 1 cup soy sauce
  • 1 cup packed brown sugar
  • 1/4 cup red wine vinegar
  • 1 tablespoon vegetable oil
  • 2 teaspoons finely chopped garlic
  • 2 teaspoons grated gingerroot
Instructions:
  • Put the chicken in sealable freezer bags. Mix the rest of the ingredients in a medium bowl until the sugar is dissolved. Divide the marinade evenly among the bags. Seal the bags and freeze for up to 3 months.
  • Thaw by placing the bag(s) in the refrigerator overnight.
  • Preheat oven to 350°F. Arrange chicken with marinade in a baking dish. Bake uncovered for 50-60 minutes, occasionally turning, until chicken juices run clear when the thickest part is cut (minimum 165°F).
