Freeze-Ahead Spinach-Cheese Lasagna Rolls

Delicious spinach-cheese lasagna rolls - freeze now, bake later. Roll noodles with spinach and cheeses, top with marinara sauce.
Ingredients:
  • 3 boxes (16 oz each) lasagna noodles
  • 6 cups crumbled feta cheese (24 oz)
  • 1 container (24 oz) cottage cheese
  • 1 container (15 oz) ricotta cheese
  • 1 cup shredded Parmesan cheese (4 oz)
  • 2 boxes (9 oz each) frozen chopped spinach, thawed, squeezed to drain
  • Marinara sauce
  • Shredded mozzarella cheese
Instructions:
  • Cook noodles in a Dutch oven of boiling water in batches of about 15 noodles for around 5 minutes or until slightly flexible but not fully cooked. Make sure to bring the water back to a boil before adding the next batch of noodles. Drain and lay the noodles in a single layer on paper towels.
  • Combine feta cheese, cottage cheese, ricotta cheese, and Parmesan cheese in a large bowl. Add spinach and mix well. Spoon 3 tablespoons of the filling down the length of each noodle, roll them up, and place seam side down on a cookie sheet. Freeze for about 30 minutes.
  • Place the frozen rolls in airtight freezer bags, seal tightly, and freeze for up to 3 months.
  • Start by taking out 6 delicious lasagna rolls from the package. Spray an 8-inch square (2-quart) glass baking dish with cooking spray, then arrange the rolls in the dish. Cover with foil and let them thaw in the refrigerator overnight for maximum flavor.
  • Preheat your oven to 350°F. Drizzle 2 cups of marinara sauce over the rolls and generously sprinkle 1 cup of shredded mozzarella cheese on top. Cover the dish and bake for 35 to 40 minutes, or until the sauce is bubbling and the cheese is perfectly melted.
