Family-friendly, easy pies made in a Kmart pie maker. Perfect for school lunchboxes - make ahead and freeze.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 1 brown onion, finely chopped
  • 1 bunch English spinach, leaves picked, washed, dried, roughly chopped
  • 1 green onion, finely chopped
  • 62.50 ml finely chopped fresh mint leaves
  • 150g fetta, crumbled
  • 150g fresh ricotta, crumbled
  • 125.00 ml finely grated parmesan
  • 10 sheets filo pastry
  • 80g butter, melted
Instructions:
  • First, warm up some oil in a spacious frying pan on medium-high heat. Throw in the brown onion and sauté it for 5 minutes until it's nice and soft. Toss in the spinach, green onion, and mint, and stir everything around for about 3 minutes until the greens are all wilted and any liquid has evaporated. Put everything into a large bowl and pop it in the fridge for 15 minutes to chill.
  • Combine the cheeses and eggs with the cooled spinach mixture. Season with pepper and mix until fully incorporated.
  • Lay down one filo sheet, brush with butter, then layer with another sheet of filo. Continue layering with 3 more filo sheets. Repeat to create a second stack. Cut each stack in half lengthwise, then into 12 strips each, totaling 48 strips.
  • Heat pie maker. Coat 3 filo strips with butter. Cross strips in pan. Fill with pastry. Add 2 tbsp spinach mix. Fold over edges. Make 3 more pies. Brush with butter. Cook for 16 minutes until golden. Cool on wire rack. Create 16 pies. Enjoy!
