Upgrade gozleme by cooking it in a Kmart pie maker for a convenient twist on the classic with spinach, feta, and flaky pastry.
Ingredients:
  • 250g pkt frozen spinach, defrosted, excess liquid drained
  • 100g feta, crumbled
  • 100g (1 cup) coarsely grated mozzarella
  • 1 green shallot, trimmed, thinly sliced
  • 40.00 ml finely chopped fresh mint leaves
  • 9 sheets filo pastry
  • 70g butter, melted
  • Greek-style yoghurt, to serve
Instructions:
  • Combine the spinach, feta, mozzarella, shallot, and mint in a large bowl until mixed thoroughly.
  • Lay one sheet of filo on a clean work surface. Brush with melted butter. Repeat layering and buttering with five more filo sheets. Cut the layered filo lengthwise, then crosswise into six equal stacks using a sharp knife.
  • 1. Line each pie maker hole with a filo stack, letting it hang over the edges. Fill each with the pie filling until even. Fold the overhanging filo over the top. Brush with butter. 2. Close the lid, switch on the pie maker, and cook for 5 minutes. Flip over and continue cooking for another 5 minutes. 3. If desired, sprinkle with sesame seeds in the final minute of cooking. 4. Transfer the pies to a tray and cover with foil to maintain warmth.
  • Brush the remaining sheet of filo with butter on a work surface. Layer the 2 remaining sheets with butter. Fold the filo in half and cut into 4 even filo stacks once the gozleme are cooking.
  • Continue cooking the remaining filo stacks and spinach mixture. Serve the gozleme on a dish with a side of yoghurt and lemon wedges.
