Homemade French macarons with luscious buttercream filling.
Ingredients:
  • 3 extra-large egg whites
  • 0.33333334326744 cup white sugar
  • 1.6666667461395 cups confectioners' sugar
  • 1 cup almond flour
  • 1 pinch salt
  • 0.5 cup butter, softened
  • 0.66666668653488 cup confectioners' sugar
  • 0.5 teaspoon vanilla extract
Instructions:
  • Heat your oven to a toasty 300 degrees F (150 degrees C) and cover a baking sheet with parchment paper.
  • In a glass, metal, or ceramic bowl, use an electric mixer on medium speed to beat egg whites until foamy, for about 30 seconds. Then, add white sugar and beat until stiff peaks form and hold their shape when the bowl is turned upside down, which should take about 5 minutes.
  • Sift the confectioners' sugar, almond flour, and salt together twice. Gently fold into the egg whites until the batter is smooth and flows slowly off the spatula. Transfer the batter to a piping bag with a round tip.
  • Pipe batter onto the parchment paper in 1-inch diameter circles to make macarons, tapping the baking sheet on the counter 10 times to remove air bubbles.
  • Place the macarons in the preheated oven and bake for 9 minutes. Rotate the baking sheet halfway through and continue baking until the macarons are shiny with slightly risen feet (ruffles around the edge), for about 9 minutes more. Remove from oven, peel off parchment paper, and let cool completely for about 30 minutes.
  • Whip together butter, 2/3 cup confectioners' sugar, and vanilla extract using an electric mixer until luxuriously creamy and thick, approximately 10 minutes. Spoon the filling into a piping bag equipped with a round tip.
  • Fill the center of one macaron with a small amount of filling, then gently press another macaron on top to create a sandwich.
