French pear cake recipe

Indulgent pear cake with a touch of lemon, perfect for any occasion. Juicy pears enhance the rich flavor of this buttery cake. Easily customizable with vanilla instead of lemon. Enjoy with cream or on-the-go in a lunchbox!
Ingredients:
  • 185g butter, chopped, at room temperature, plus extra 20g, melted
  • 150g (3/4 cup) caster sugar, plus extra 2 tsp
  • 2 tsp finely grated lemon rind
  • 150g (1 cup) plain flour
  • 75g (1/2 cup) self-raising flour
  • 80ml (1/3 cup) milk
  • 21.00 gm lemon juice
  • 2 pears, peeled, quartered, cored
Instructions:
  • Preheat your oven to 180C (160C fan forced) and prepare a 21cm springform pan by greasing it and lining the base with baking paper.
  • In a bowl, whip the butter, sugar, and lemon zest with electric beaters until light and fluffy. Gradually add the eggs one by one, beating thoroughly after each addition. Combine and sift the flours together.
  • Gently mix half of the flour into the butter until just combined. Stir in milk and lemon juice. Fold in the rest of the flour. Pour half of the batter into the pan and evenly spread it. Slice pears into long 7mm wedges. Place half of them on top of the batter. Add the rest of the batter, then top with the remaining pear slices.
  • Drizzle the pears with more melted butter, and dust with additional sugar. Bake until they turn golden and the cake bounces back when touched at the center. Allow to rest for 10 minutes, then flip onto a wire rack to cool down. Serve and enjoy.
