French-style pork pot roast

Toss French-style pork roast ingredients in pot, let simmer to perfection.
Ingredients:
  • 1.5kg piece pork scotch (neck)
  • 1 brown onion, diced 2 carrots, diced
  • 4 shortcut bacon rashers, thinly sliced
  • 8 sprigs fresh thyme
  • 2 garlic cloves, quartered
  • 1 large Granny Smith apple, peeled, diced
  • 1 dried bay leaf
  • 125.00 gm dry white wine
  • 255.00 gm chicken style liquid stock
  • 150g button mushrooms, halved
  • 62.50 ml chopped fresh flat-leaf parsley leaves
  • 400g green beans, steamed
  • Mashed potato, to serve
Instructions:
  • Lay the pork on a board and use kitchen string to tie it up at 5cm intervals for a secure hold.
  • In a large, heavy-based flameproof casserole dish over medium heat, sauté onion, carrot, and bacon until onions are softened, about 6 to 8 minutes.
  • First, strip the leaves from 4 sprigs of thyme, discarding the stems. Combine the chopped garlic, thyme leaves, and salt until the garlic is finely minced. Massage the mixture onto the pork.
  • Sear pork until golden brown. Combine with apple, bay leaf, wine, and thyme. Simmer until wine is reduced by half. Add stock and water. Simmer gently, then season with pepper. Cover and cook on low for 1 hour.
  • 1. Cook pork for 1 hour, then turn. 2. Add mushrooms to sauce mixture. 3. Continue cooking for 45 minutes, or until pork is tender and mushrooms are soft. 4. Remove bay leaf and kitchen string from pork. 5. Stir in parsley. 6. Serve with beans and mashed potato.
