Irresistible stone fruit cobbler sweetened with currant jelly and topped with flaky biscuits.
Ingredients:
  • 2 cups sliced fresh peaches
  • 2 cups sliced fresh nectarines
  • 2 cups pitted and quartered plums
  • 1 teaspoon cornstarch
  • 1 cup currant jelly
  • 0.5 teaspoon apple pie spice
  • 0.125 teaspoon white pepper
  • 1 (16.3 ounce) can refrigerated flaky biscuits (such as Pillsbury Grands!®)
  • 0.25 teaspoon ground cinnamon
Instructions:
  • Heat your oven to a toasty 350 degrees F (175 degrees C) and generously spray an 8x13-inch baking dish with cooking spray.
  • Gently combine peach, nectarine, and plum slices in a bowl. Dust with cornstarch to coat. Add currant jelly, apple pie spice, and white pepper. Mix by hand to coat fruit. Transfer fruit to baking dish.
  • Open the can of biscuits and cut them in half. Place the biscuit halves on top of the fruit. Combine sugar and cinnamon in a small bowl, then evenly sprinkle over the biscuit dough.
  • Bake the biscuits in the preheated oven until they turn golden brown, for 20 to 25 minutes. Let the dish cool on a rack for at least 20 minutes to allow it to set up.
