Fresh fruit salad with frozen honey yoghurt

Ingredients:
  • 2 egg whites
  • 200g low-fat honey-flavoured yoghurt
  • 1 banana, sliced
  • 1 ripe mango, peeled, flesh sliced
  • 1/2 medium pawpaw, de-seeded, peeled, sliced
  • 2 oranges, peeled, segmented
  • 2 ripe peaches, peeled, sliced
  • 60mls (1/4 cup) fresh lime juice
  • 2 passionfruit
Instructions:
  • Using an electric mixer, beat egg whites until stiff peaks form. Gently fold them into the yogurt in 2 batches. Transfer the mixture to a shallow metal tray, preferably stainless steel, and freeze for 2 hours until partially set. Break up ice crystals with a fork, then refreeze for 2-3 more hours until just set.
  • In a bowl, mix together the banana, mango, pawpaw, oranges, peaches, and lime juice. Serve in individual bowls.
  • Use a fork to mix the frozen yoghurt again, creating a smooth texture, then drizzle it over the fruit salad. Finish by spooning the passionfruit pulp on top before serving right away.
