Cheeky UK fruit flan: cake crust, creamy filling, fresh berries/kiwi, zesty glaze.
Ingredients:
  • 2.125 cups all-purpose flour
  • 0.5 teaspoon cream of tartar
  • 0.5 teaspoon baking soda
  • 0.5 cup white sugar
  • 0.5 cup confectioners' sugar
  • 0.5 cup unsalted butter, softened
  • 0.5 cup vegetable oil
  • 1 large egg
  • 0.5 teaspoon vanilla extract
  • 1 (8 ounce) package cream cheese, softened
  • 0.33333334326744 cup white sugar
  • 3 cups fresh strawberries, hulled and halved
  • 1 cup fresh blueberries, rinsed and dried
  • 3 kiwifruit, peeled and thinly sliced
  • 0.25 cup white sugar
  • 1 tablespoon cornstarch
  • 0.5 cup water
  • 0.5 cup orange juice
  • 2 tablespoons lemon juice
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and grease a 10x15-inch jelly roll pan.
  • Prepare the crust by sifting flour, cream of tartar, and baking soda into a mixing bowl.
  • In a large bowl, use an electric mixer to cream together both sugars, butter, oil, egg, and vanilla until smooth. Gradually mix in the flour mixture until fully combined. Spread the batter evenly over the prepared pan.
  • Bake in the preheated oven until beautifully golden, for 10 to 12 minutes. Allow it to cool completely for about 30 minutes before enjoying.
  • Prepare the filling by mixing cream cheese, sugar, and vanilla in a bowl until smooth and creamy. Spread the mixture over the cooled crust and artfully arrange the fruit on top. Chill in the refrigerator until the glaze is prepared.
  • Prepare the flavorful glaze by combining sugar and cornstarch in a small saucepan. Gently whisk in water, orange juice, and lemon juice, then bring the mixture to a gentle boil over medium heat. Let it simmer for 1 minute, then take it off the heat to cool completely, which should take around 20 to 30 minutes.
  • Evenly coat the fruit with the glaze using a spoon or brush. Chill in the refrigerator for a minimum of 1 hour before serving.
