Florida grapefruit cake: vibrant citrus flavor at its peak.
Ingredients:
  • 3 cups sifted cake flour
  • 2.5 teaspoons baking powder
  • 1.75 cups white sugar
  • 0.66666668653488 cup butter, softened
  • 2 large eggs
  • 1.5 teaspoons vanilla extract
  • 1 teaspoon grated grapefruit zest
  • 0.75 cup milk
  • 0.5 cup fresh grapefruit juice
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease and flour two 9-inch pans.
  • In a medium bowl, combine the flour, baking powder, and salt by sifting them together. Set aside.
  • In a large bowl, use an electric mixer to whip together sugar and butter until light and fluffy. Incorporate eggs one at a time, mixing thoroughly after each. Add vanilla and grapefruit zest. Alternate adding flour mixture and milk mixed with grapefruit juice, beating briefly after each addition. Pour batter into prepared pans.
  • Bake in the preheated oven for 25-30 minutes or until a toothpick comes out clean. Allow to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
