Enhance roast chicken with fresh grapefruit juice for a zesty twist.
Ingredients:
  • 1 (3 pound) whole chicken, rinsed and patted dry
  • 1 grapefruit, cut in half
  • 1 tablespoon olive oil
  • 0.5 teaspoon seasoned salt
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C).
  • Put the chicken in a roasting pan, generously squeeze grapefruit juice over and inside it. Drizzle with olive oil, sprinkle with seasoned salt, and cover with foil.
  • Bake covered in a preheated oven for 45 minutes. Uncover and bake for an additional 15 minutes until the meat is cooked through. Use a thermometer to ensure chicken reaches 180°F (82°C). Remove from oven, cover with foil, and let rest for 10 minutes before slicing.
