Zesty grapefruit salsa elevates simple chicken dish to mouthwatering delight.
Ingredients:
  • 4.60 gm vegetable oil
  • 4 small (about 180g each) single chicken breast fillets
  • Salt & freshly ground black pepper
  • 1 ripe avocado, halved, stone removed, peeled, finely chopped
  • 1 pink grapefruit, peeled, finely chopped
  • 1 small red onion, halved, finely chopped
  • 125.00 ml loosely packed coarsely chopped fresh coriander
  • 1/2 tsp Angostura Aromatic Bitters
  • Steamed jasmine rice, to serve
Instructions:
  • - In a non-stick frying pan over high heat, warm the oil. Season chicken breasts with salt and pepper. Cook each side for 4 minutes or until golden brown and fully cooked. - Place the chicken on a plate and cover with foil. Allow it to rest for 5 minutes. - Slice the chicken thickly across the grain before serving.
  • In a medium bowl, mix together ripe avocado, juicy grapefruit, red onion, fresh coriander, and a touch of bitters. Season with salt and pepper to taste.
  • Plate the rice, layer with seasoned chicken, top generously with avocado salsa, and serve promptly.
