Whip up a vibrant Middle Eastern feast for a delicious and healthy home dinner party.
Ingredients:
  • 2kg whole chicken
  • 1 garlic clove, crushed
  • 2 tsp sumac
  • 1 tsp finely grated lemon rind
  • 21.00 gm lemon juice
  • Olive oil cooking spray
  • 125.00 ml fresh coriander leaves
  • Baba ghanoush, to serve
  • Tabouli, to serve
Instructions:
  • Start by thoroughly washing the chicken, including the cavity, under cold running water. Next, pat it dry with paper towel and place it breast-side down on a large chopping board. Using sharp kitchen scissors, cut alongside the backbone on both sides and remove it. Flip the chicken over, then firmly press down on the breast bone with the heel of your hand until the bone breaks. Finally, transfer the chicken to a baking dish.
  • In a bowl, mix together oil, garlic, sumac, lemon rind, and lemon juice. Massage the flavorful mixture onto the chicken, cover it, and let it chill in the fridge for 2 to 3 hours, if possible.
  • Prepare the barbecue plate or chargrill by spraying with oil and heating over medium heat. Grill the chicken, covered, for 30 minutes on each side until fully cooked. Cut the chicken into large pieces, then garnish with coriander. Serve alongside tabbouleh and baba ghanoush.
