Fresh lemonade

Sip on a refreshing glass of lemonade to beat the summer heat.
Ingredients:
  • 12 lemons
  • 250-300g caster sugar
  • 1/2 bunch mint, leaves picked
Instructions:
  • Cut the lemons in half and set one half aside. Juice the lemons using a citrus juicer, making sure to remove the seeds. Strain the juice twice - once through a wire sieve into a large bowl, and once more into a jug.
  • Gradually incorporate the sugar into the lemon juice while stirring consistently until fully dissolved. Adjust sweetness to your preference by tasting the cordial as you go, as the tartness of lemons can differ.
  • Slice the remaining lemon into thin rounds, then further chop each round into small segments. Tear the mint leaves into small pieces.
  • Pour the cordial into jugs and/or bottles, filling each one a quarter of the way full. Top up with water, leaving some space for ice. Garnish with lemon slices and mint before serving.
