Chill out with this vibrant raspberry lemonade infused with fresh mint.
Ingredients:
  • 375ml lemon juice
  • 220g caster sugar
  • 750ml water
  • 1 lemon, sliced, to garnish
  • Fresh mint leaves, to garnish
  • 50g fresh raspberries or frozen raspberries
  • 20.00 gm caster sugar, extra
  • 1 lemon, sliced
Instructions:
  • Gently combine lemon juice, caster sugar, and water in a saucepan over low heat until the sugar dissolves, about 5 minutes. Allow it to cool, then refrigerate for 1 hour before serving.
  • While you wait, make the raspberry puree: In a saucepan over low heat, combine raspberries and extra caster sugar. Cook and stir gently for 2 minutes until the sugar dissolves and the raspberries break down and release their juices. Then strain the mixture through a fine sieve into a bowl.
  • Transfer the lemonade to a stylish serving jug. Drizzle in 1 tablespoon of the vibrant raspberry puree and gently mix it in. Drop in some slices of lemon, fresh mint leaves, and ice cubes. Distribute the rest of the raspberry puree among the serving glasses, then pour in the delightful pink lemonade. Enjoy your refreshing creation!
