Festive Pumpkin Oatmeal Cookies with whole wheat flour, ideal for Thanksgiving and holiday gatherings.
Ingredients:
  • 0.75 cup shortening
  • 0.5 cup brown sugar
  • 1.75 cups shredded pumpkin
  • 2 medium eggs
  • 2 cups whole wheat flour
  • 0.5 teaspoon ground ginger
  • 0.5 teaspoon ground allspice
  • 0.25 teaspoon ground cloves
  • 1 cup quick-cooking oats
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and elegantly prepare a baking sheet by lining it with parchment paper.
  • In a bowl, use an electric mixer to beat together white sugar, shortening, and brown sugar until smooth and creamy. Then, stir in pumpkin and eggs. Add flour, baking powder, cinnamon, ginger, allspice, and cloves, mixing until just combined. Finally, fold in oats.
  • Spoon dollops of dough onto the prepared baking sheet.
  • Bake until the cookie edges are golden and crisp, approximately 12 minutes in the preheated oven.
