Indulge in a decadent pumpkin pie filled with creamy pumpkin puree, honey, warm spices, and a rich custard filling baked to perfection in a flaky crust.
Ingredients:
  • 1 medium sugar pumpkin
  • 1 tablespoon vegetable oil
  • 1 recipe pastry for a 9 inch single crust pie
  • 0.5 teaspoon ground ginger
  • 0.5 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 4 eggs, lightly beaten
  • 1 cup honey, warmed slightly
  • 0.5 cup milk
  • 0.5 cup heavy whipping cream
Instructions:
  • Preheat the oven to 325 degrees F (165 degrees C) and prepare a jelly roll pan by lining it with lightly oiled foil.
  • Halve the pumpkin and scoop out the seeds. Drizzle the cut surface with a bit of oil, then place it cut-side down on the pan.
  • Roast in the preheated oven until the flesh is tender when pierced with a fork, for about 45 minutes. Allow to cool until slightly warm before serving.
  • Preheat oven to 400 degrees F (205 degrees C).
  • Scoop out the pumpkin flesh and either mash it by hand in a bowl or blend it in a blender until smooth.
  • In a large bowl, combine 2 cups pumpkin purée, spices, and salt until blended. Mix in eggs, honey, milk, and cream until smooth. Pour the filling into the pie shell.
  • Bake in the oven until a knife inserted 1 inch from the edge of the pie comes out clean, for about 50-55 minutes. Let it cool on a wire rack.
