Indulgent pumpkin pie made with fresh sugar pumpkin, French vanilla coffee creamer, brown sugar, and warm cinnamon in a premade crust.
Ingredients:
  • 1 (1 pound) pumpkin, halved and seeded
  • 1 cup skim milk
  • 0.5 cup French vanilla flavored liquid coffee creamer
  • 2 eggs
  • 0.75 cup packed brown sugar
  • 0.5 cup chopped walnuts
  • 0.5 teaspoon ground cinnamon
  • 1 (9 inch) prepared pie crust
Instructions:
  • In a large saucepan, submerge the pumpkin halves in water. Boil until tender, around 30 minutes. Drain and scoop out the cooked pumpkin, discarding the peel. Mash until smooth.
  • Preheat the oven to 400°F (200°C).
  • In a large bowl, combine 2 cups of mashed pumpkin with milk, coffee creamer, eggs, brown sugar, walnuts, and cinnamon until well mixed. Spoon the mixture into the pie crust and bake in a preheated oven for about 1 hour until the filling is firm and fully cooked.
