White Chocolate-Dipped Cherry Thins

Indulge in decadent cherry walnut cookies dipped in vanilla candy coating for the perfect dessert.
Ingredients:
  • 1 cup sugar
  • 1 teaspoon almond extract
  • 1/2 teaspoon baking soda
  • 1 container (8 oz) red candied cherries, finely chopped (about 1 cup)
  • 1/4 cup chopped walnuts
  • 1 package (20 oz) vanilla-flavored candy coating (almond bark)
  • Edible glitter, if desired
Instructions:
  • Combine sugar, butter, vanilla, almond extract, and egg in a large bowl. Mix with an electric mixer on medium speed until well blended. Gradually add flour, baking soda, and salt on low speed. Fold in cherries and walnuts.
  • Divide the dough in half and shape each half into an 8-inch-long and 2-inch-diameter roll. Wrap each roll in plastic wrap and refrigerate for about 2 hours until firm.
  • Preheat oven to 375°F. Slice rolls into thin 1/8-inch slices. Arrange slices on ungreased cookie sheets, leaving 2 inches of space between each. Bake for 6 to 8 minutes, or until they turn a light brown color. Allow them to cool briefly on the sheets before transferring to wire racks. Finish cooling for about 15 minutes before serving.
  • Microwave candy coating in a medium microwavable bowl until smooth. Dip 1/3 of each cookie at an angle into the coating, letting the excess drip back into the bowl. Place on waxed paper, sprinkle with glitter, and let it set for about 1 hour.
