Decadent chocolate walnut brownies with a dual-layered vanilla and chocolate frosting. Perfect for sharing!
Ingredients:
  • 1.5 cups margarine, at room temperature
  • 6 eggs
  • 1 cup unsweetened cocoa powder
  • 2.25 cups all-purpose flour
  • 1 tablespoon vanilla extract
  • 1.5 teaspoons salt
  • 1 cup chopped walnuts
  • 0.5 cup margarine, at room temperature
  • 2 tablespoons instant vanilla pudding mix
  • 3 tablespoons milk
  • 2 cups confectioners' sugar
  • 3 tablespoons margarine, melted
  • 0.5 cup unsweetened cocoa powder
  • 0.33333334326744 cup milk, or more as needed
  • 1.5 teaspoons vanilla extract
  • 3.5 cups confectioners' sugar
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C), then generously grease and flour an 11x17 inch baking pan.
  • In a large bowl, cream together 1 1/2 cups of margarine and sugar until fluffy. Add eggs one at a time, ensuring each is fully incorporated before adding the next. Incorporate 1 cup of cocoa powder, flour, and 1 1/2 teaspoons of salt. Mix in 1 tablespoon of vanilla extract and chopped walnuts before transferring the brownie batter to the prepared baking pan.
  • Bake in the preheated oven for 30 minutes until a toothpick inserted in the center comes out clean. Cool on a rack.
  • Cream 1/2 cup of margarine until fluffy, then mix in instant pudding powder and 3 tablespoons of milk until smooth. Slowly incorporate 2 cups of confectioners' sugar. Spread the frosting over the cooled brownies and allow it to set.
  • Prepare the second frosting layer by combining melted margarine with cocoa powder, then stirring in milk and gradually beating in confectioners' sugar until smooth and spreadable. Spread the frosting on top of the first layer. Add more milk if needed for consistency.
