Indulgent chocolate brownies paired perfectly with sweet vanilla ice cream. Delicious!
Ingredients:
  • Melted butter, to grease
  • 300g dark chocolate, finely chopped
  • 125g butter, chopped
  • 160g (2/3 cup) caster sugar
  • 2 eggs, lightly whisked
  • 150g (1 cup) plain flour
  • 200g white chocolate, chopped
  • 1 x 100g pkt walnut halves, chopped
Instructions:
  • Preheat the oven to 180°C. Grease a square 19cm cake pan with melted butter, line the base and 2 opposite sides with baking paper, leaving some overhang. In a medium saucepan over low heat, melt the dark chocolate and butter together, stirring occasionally for about 5 minutes until smooth. Add the sugar and continue stirring for another 3 minutes until well combined.
  • Take off the heat and let it cool for 5 minutes. Mix in the eggs and flour. Gently fold in white chocolate and walnuts until fully incorporated. Transfer the mixture into the pan and use the back of a spoon to level the top.
  • Bake in the oven for 25 minutes until a skewer inserted into the center comes out slightly sticky. Let cool completely for 3 hours, then cut into squares to serve.
